On "Another Day Cooking with Dreux," I bring to you my flavorful blackened rub! Now if you know me you know I’m a girl that loves spice. I mean I’m a creole southern belle what do you expect haha. Born & raised in Louisiana spicy practically is my middle name.
I created this TASTY rub with some of my favorite spices. This rub is so versatile you can use it on fish, chicken, and even shrimp. Yep you heard that right! Some spices include paprika, cayenne pepper, peppercorn, and garlic powder. I decided to prepare salmon with this rub accompanied by yellow rice as a side. One thing I love about this meal is that it only took 30-40 min including preparation. Let's get to it shall we!
INGREDIENTS: 1 1/2 lb-2lbs. salmon fillets 1/4 cup olive oil 1/4 cup lemon juice 2 tsp garlic powder or 2 garlic cloves, finely chopped 3 Tbs. paprika 1- 1/2 tsp peppercorn 1 teaspoon cayenne pepper 1 tsp Mexican oregano 🌿 1 1/2 teaspoon salt
Great thing about these ingredients is that I am always fully stocked with these spices in my pantry. I use a peppercorn grinder about 10 grinds. PREPARATION:
1. In a small bowl, combine olive oil, lemon juice and garlic.

2. In a small bowl, combine paprika, cayenne pepper, garlic powder, peppercorn, mexican oregano, and salt.

3. Cut salmon horizontally into four equal portions. Brush both sides of fillets with oil mixture; lay on cutting board skin side up.

4. Sprinkle seasonings on skin side.

5. Lightly brush bottom of large pan with oil mixture.
6. Place in large pan & sprinkle the remaining seasoning on the top side of each filet if needed.

7. Bake on 350 for 25 minutes.
8. Remove from pan.

9. Serve and enjoy!
