Buttery Lemon Garlic Salmon!

Today I have an AMAZING flavorful dish I wanted to share with you all. Now I know some of you may not eat salmon so I have great news for you, this meal can be created with shrimp or chicken. WOWZA!! Talk about a special surprise there. Lately I have been considering on starting a pescatarian diet again. A few years ago I went on this special diet for about 6 months and loved every moment of it. I have been getting a little sick of chicken and trying to venture out into other meals.
With that being said I know you will love this meal just as much as I did. Although pictured you will see a side, this blog is only for the recipe for the salmon as you can add whatever side you would like to this dish.
Buttery Lemon Garlic Salmon (shrimp, chicken)
Prep Time: 5 minutes
Cook Time: 25 minutes.
Total Time: 30 minutes
INGREDIENTS
1.5-2 lb skin-on salmon fillet
1 lemon
3 tbsp lemon juice
1/2 c unsalted butter, melted
1 tbsp minced garlic
1/2 tsp black pepper
1/2 tsp cayenne
1 tsp sea salt
1/2-1 tbsp fresh parsley
Foil paper
INSTRUCTIONS
1. Preheat oven to 375F. Tear a piece of foil long enough to cover a large baking pan. Place foil inside pan and raise edges of foil up about two inches on sides. Spray with avocado/olive oil.
2. Add lemon slices onto middle of pan. Space evenly. Lay salmon fillet on top of lemons.
3. In a microwave safe bowl, heat butter for 45-1 minute until melted.
4. Stir in lemon juice and garlic into butter. Pour 3/4 of mixture onto salmon fillet. Saving the remaining on the side to top off at the end.
5. Sprinkle sea salt, black pepper, and cayenne onto fillet.
6. Seal up foil. If you need to add a sheet on top in order to seal it do so. Get it as air tight as possible.
7. Bake for 17 minutes.
8. Remove from oven and open to vent. Set oven to hi broil and replace pan for 8 minutes.
9. Remove, garnish with parsley and remaining mixture is desired and serve.
